Stuffed Chilli Recipe
Ingredients
10 Jalapeno Chillies
100g Cream cheese
2 Garlic cloves
Half a red onion
1 teaspoon cumin
Half teaspoon smoked paprika
40g Mature Cheddar
Squeeze of lemon juice and pinch of lemon zest
1 Tablespoon chopped fresh coriander
50g Chopped sun blushed tomatoes
50g Breadcrumbs
splash of olive oil
Method
Cut the chillies length-ways and remove seeds, then blanch in boiling water for a couple of minutes.
Fry onions, cumin and garlic in olive oil until soft and allow to cool.
In a separate bowl mix cream cheese, cheddar, paprika, lemon, sun blushed tomatoes, coriander and half of the breadcrumbs, then add onions cumin and garlic.
Stuff each chilli individually and lay on a baking tray, sprinkle with the remaining breadcrumbs and bake for 20 Minutes at 200 degrees C.
